Fat Cells in Meat Quality
The University of Illinois, North Carolina State University, and other states working on the NIFA-sponsored Regulation of Adipose Tissue Accretion in Meat Animals (NCR-097) multistate project have recently emphasized mechanisms that control adipocyte (fat cell) growth and increase the number of fat cells. Studies include research to control adipocyte differentiation using DNA and immunological technology to probe how genes are expressed. Recently, seven experiment stations contributed to understanding mechanisms for conjugated linoleic acid modification related to potential cancer prevention properties.
