Katelyn Boyle, a Georgia native, is a doctoral student at Alabama A&M University (AAMU) in the Department of Food and Animal Sciences, majoring in Food Science with a Nutritional Biochemistry concentration. 

Supported by a USDA National Institute of Food and Agriculture 1890 Scholarship, she enrolled in AAMU in Fall 2020 at the age of 16, following her family’s footsteps. Katelyn received her Bachelor of Science Degree in Food Science from AAMU in Spring 2022 and her Master of Science Degree in Food Science in December 2023.  

Katelyn has a passion for the well-being of children and adolescents, and she is focusing her research on chronic diseases that affect children. Her current work is investigating the anti-oxidative and anti-obesity potential of two possible functional food ingredients for the food industry. 

Katelyn has presented her research on the regional and national levels. At the Association of 1890 Research Directors Competition in April 2024, she placed first in the Graduate Research Poster competition. Her poster shared her work on spirulina algae and bilberry as ingredients for a functional food snack product. 

As a student, Katelyn interned at two Fortune 500 Companies. In 2023, she worked at The Coca-Cola Company in its Scientific & Regulatory Affairs office. Most recently, Katelyn interned as a Research & Development Food Scientist with General Mills Inc. 

She currently represents AAMU on the National Institute of Food Technologists’ Student Association (IFTSA) Board of Directors as Vice President of Chapter Engagement.  On campus, Katelyn serves as AAMU’s IFTSA Chapter’s President and serves as the Secretary on the AAMU Graduate Student Council.
